I am lazy. I use Garmin Connect, then just tap to download it from the
smartphone app and it pops over wirelessly to the 810.

This. Very definitely. Get good quality muffs not cheep (such as Oxford)
ones that won't be big enough and will push on the levers. Mine are by
Toucan IIRC.

Yep, that's the main one I use (as a result of Eric's recommendation, I
think). For London (ie. delving into the mysterious wastelands of South
or West London), http://www.cyclestreets.net/journey/.

Slight off topic but what the hell, it's Ixion. And potentially useful
for the Cyclixies. For creating routes I've found ridewithgps.com to
be excellent, and the file you generate from it can be dropped
straight on to a Garmin with openstreetmaps. IT's how I plan my
Yurrupean bike excursions and then drop them on the Garmin 800.

Handlebar muffs and whatever gloves you like, especially if you have heated
grips.

IIRC, Windows was Mapsource, Mac was Basecamp (which I initially
disliked because change, but came to prefer), then Windows went to
Basecamp too.

Ah, thinking about it, I may have limited Mavericks/Yosemite experience
of Basecamp as that was probably about when I made the switch to online
tools too.

Don't I recall quite a gap between usable PC support and MAC? Mapsource
springs to mind...
